Plant-based Sausage, Pear and Potato Breakfast Hash

This Sausage, Pear and Potato Breakfast Hash is made with tons of veggies, plant-based sausage, and a combination of green and red Anjou pears. Recipe by Andrea (@beautifuleatsandthings).
INGREDIENTS
  • 1 green Anjou pear, chopped
  • 1 red Anjou pear, chopped
  • 3 potatoes, chopped
  • 9oz plant-based sausage, sliced
  • 1 bunch of kale, stems removed & chopped
  • 3 Tbsp oil
  • 1 tsp rosemary
  • 1 tsp garlic powder
  • Salt and pepper to taste
DIRECTIONS

In a large skillet, heat 3 tablespoons olive oil on medium-high until hot. Add in the potatoes, onions, and rosemary. Cook for about 7-10, or until potatoes become slightly tender.

Add in the plant-based sausage and kale, and cook for about 5-6 minutes (stirring frequently), or until the kale has wilted. Season with garlic powder, and salt and pepper to taste.

Remove from heat, and toss in pears. *If you prefer softer, cooked pears, simply add them in along with the plant-based sausage and kale.
Serve warm and enjoy!
