This salad supplies healthy fats and an array of plant nutrients. Serve immediately.
- 3 tablespoons mayonnaise
- 2 teaspoons olive oil
- 1 tablespoon lemon juice
- 2 teaspoons minced garlic
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 can (12 ounces) tuna, packed in water, drained
- ½ cup peeled, grated carrots
- ⅓ cup diced sweet onion
- ⅓ cup drained, diced roasted red pepper
- ¼ cup chopped fresh basil
- 1 cup USA Pears, cored, cut into julienne strips
- 5 cups arugula
Whisk mayonnaise, olive oil, lemon juice, garlic, salt, and pepper in small bowl until blended.
Mix tuna, carrots, onion, red pepper, and basil in medium bowl. Add mayonnaise mixture and toss gently to combine. Gently stir in pear. Place ⅔ cup tuna salad on top of 1 cup arugula.
