- Pudding
- 1 pear, peeled and diced
- 3 cups unsweetened almond milk, divided
- 3/4 cup white chia seeds, divided
- 3/4 tsp pure almond extract, divided
- 3/4 cup vegan white chocolate, divided (I used Kind David White Chocolate Coins)
- 2.5 tsp matcha powder, divided
- Optional
- 1 pear for garnishing
- vegan white chocolate for garnishing
NOTE: Make this dessert the night before or at least an hour prior to serving to allow the chia pudding to “gel up”
In a small saucepan, add 1 cup of almond milk, 1/4 cup of vegan white chocolate, 1/4 cup diced and peeled pear, and 1/4 tsp pure almond extract and bring to a low simmer (until all the white chocolate is melted)
Transfer the mixture to a blender and blend until smooth
Pour the white chocolate pear mixture and 1/4 cup of chia seeds to a glass bowl with a lid or mason jar, shake and then place in the fridge
Now you’re going to repeat this process two more times.
In the same small saucepan, add 1 cup of almond milk, 1/4 cup of vegan white chocolate, 1/4 cup diced and peeled pear, and 1/4 tsp pure almond extract and bring to a low simmer (until all the white chocolate is melted). ** Also add in 1/2 tsp of matcha powder to this batch
Transfer the mixture to a blender and blend until smooth. Pour this mixture to another glass bowl with lid or mason jar, add 1/4 cup of chia seeds, shake and then place in the fridge
Repeat a third time, this time adding 1.5 tsp of matcha powder to the saucepan, blend, pour into a third glass bowl with lid or mason jar, add 1/4 cup of chia seeds, shake, and add to the fridge with the other two
To assemble, spoon out some of each pudding and layer in glasses and top with fresh pear and additional white chocolate, if desired. Store leftovers in the fridge
